The Surprisingly Easy RAINBOW CAKE

Here's my last post celebrating my sweetie's 3rd birthday.

A couple days before her birthday I asked her what her favorite color was.  She told me, "Orange, red .... and dark green, light blue, dark blue, purple, black, yellow ...."  I asked her, "So basically every color?"  She enthusiastically agreed.

After that conversation I thought it would be really fun to surprise her with a rainbow cake.


Here's a quick How to:
 The directions are failry simple, assuming you have LOTS of food coloring.

1.  Prepare 2 white cakes as directed (I used two french vanilla mixes from Betty Crocker).  Divide batter into 6 bowls.  Each bowl require about 1 1/2 cups of batter.  Add lots of food coloring to make Red, Orange, Yellow, Green, Blue, Purple.
2. Put each color in a round 8" pan bake for 20 minutes each.
3. Let completely cool (we let them cool in the fridge over night).
4. Slice off the very top so each cake will be level.
5.  Place each cake layer on your cake stand with frosting in between.  (It takes about 2 1/2 frosting cans, if you're purchasing it).
6. Enjoy!!

Besides the fun rainbow layers that were a surprise my daughter told me she wanted a dragonfly cake -- specifically the one from her jacket.

Everybody was real surprised to see a rainbow in the cake.  They swore they could taste all the different flavors-- ha, ha.
